Ing: 2 boxes pistachio instant jello pudding mix 11/2 cups skim milk (I used 2% milk) 2 16-20 oz cans of crushed pineapple (drained) 1 16-20 oz can of pineapple tidbits (drained) 8 oz fat free cool whip 8 oz fat free sour cream 1/2 cup of nuts of your choice 1 8 oz can of mandarin oranges (drained) for garnishing 1/4 cup of pomegranates for garnishing fresh mint for garnishing Method: In a big bowl put both the boxes of pudding in it and add the milk, with a mix stir to make a very thick pudding, to this add the sour cream and give a good mix, next add the crushed and the pineapple tidbits, make sure everything has mixed really well together, next add the cool whip and fold the cool whip in the mixture making sure all the ingredients are incorporated really well.
